Fresh carrots, chopped into fine confetti - about 1 cup (I use my spiralizer, then my chopping bowl and ulu knife. The bits the spiralizer leaves I save for my dog, who loves them.)
Crushed pineapple, drained - about 1 cup (or less... Whatever you are using up!)
Chopped black walnuts - about ¼ cup
Mayonnaise - ¼ cup or to your liking
(I used some that had a hint of lime)
A bit of fresh dill (optional, of course)
Makes a good egg salad sandwich….if you add a chopped hard-boiled egg, that is (to about half of the mixture).
